Really a useful bread making ingredient. Add 1 tbsp per cup of flour. It helps to develop strong fluffy dough structure. My hand kneaded dough risen dramatically. Check in the photo. After first rise. And even after second leavening. Cost is on higher side though. But I ordering again . You will not be disappointed.

I ordered this for baking purpose, thinking that it has high protein content (75g per 100g as mentioned on the product page). But the nutrition label on the package I received says that there is only 14g per 100g of protein. I'm not sure if this is a mistake on the label or if the information on the product page is wrong. If this actually has only 14g, then it's just normal wheat flour, and not wheat gluten.

We used this wheat gluten powder to bake Seitan - Gluten Bread - in a digital pressure cooker. Having mixed the spices and kneaded the dough, we baked it for 60 minutes. The resulting bread was soft to eat, but solid and bulky like gluten bread is supposed to be. We stored the bread in a freezer and it kept well for more than a week.The gluten powder itself can be stored in a fridge and it holds well for a month (in our case, as we didn't use it immediately). It'll probably last much longer. The packet is a press-locking plastic pouch and the seal is tight. Excellent product and excellent packaging. We will be purchasing this product regularly.
